Postdoc Brewing was the 36th visit on my bucket list of Washington State breweries. This brewery is located 500 feet away from Mac & Jacks in Redmond, WA. After taking the Mac & Jacks tour I wandered next store to check them out.
Postdoc Brewing had only been open 2 weeks by the time I stopped in. This place is a traditional family and dog-friendly taproom which is directly attached to their brewery. You could still smell the fresh paint on the walls, which made me even more excited to see what they were all about. As with most taprooms, they do not serve food. You may bring in your own or order delivery while you’re there. Postdoc does offer free tortilla chips with their beers. When I inquired about the name, I was told the Brewmaster has a PhD in biochemistry and completed his dissertation on yeast. I was very intrigued by his newfound scientific venture.
I tried all four beers they had on tap, which included the following:
- Goldilocks Blonde – If you like Belgian pale ales you’ll love this. All the right flavors of a light-crisp Belgian style blonde. ABV: 3.9%, IBU: 15
- Alpha Factor IPA – A Traditional Northwest style IPA that packs a lot of flavors and aromas. A golden amber color with a frothy white head. Well balanced and not too bitter. ABV: 7%, IBU: 63
- Postdoc Porter – A solid porter with all the roasted malt characteristics you would expect to find. A coffee-like flavor and hints of caramel. ABV: 5.1%, IBU: 27
- Cram Session Coffee Porter – WOW! This is a straight up iced coffee. An amazing robust porter that packs a punch without the thickness you might expect. Dark with a frothy head. I hope they do growler fills, because I’m taking this to work each morning to kick start my day. ABV: 5%, IBU: 26
